The AceSEF creates SEF URLS for VM articles wich are set to not published in the VM administration.

Also in the sitemap extension this URLs show up.

how to turn that off?

AceSEF generates SEF URLs for because somewhere on your site and/or on other sites that link is shared/clicked. Check the following article plz, use the product_id=xxx variable:

NON published Virtumart articles do not have an specific string to exclude them as far as i can see,

can you tell what you meen exactly with "'somewhere on your site and/or on other sites that link is shared/clicked"' ?

the aceSef component should only crawl and create SEF urls for published items i think.

so if i understand it well,.. once an SEF url is created by aceSEF and afther a wile the article will be un published or removed in VM or in Joomla administration, the only way to remove the URL is a manual deletion?

VirtueMart articles? As far as I know VirtueMart is an e-commerce component which mean VirtueMart products?

Let's say you've shared the link of any article of www.a.com at www.b.com site. Then you've un-published the article. If anyone from www.bcom clicks on that link then Joomla will transfer the link to AceSEF to generate the SEF one. This can also be done through Google if any article is cached by Google.
